For the Potatoes

  • 1 lb Baby Potatoes about 18 small potatoes, scrubbed clean and boiled until tender but firm, then peeled

For the Sauce

  • 1 medium Onion chopped into 1-inch pieces
  • 1 medium Bell Peppers capsicum, any color, chopped into 1-inch pieces
  • 4 tbsp Spring Onions chopped, separate white and green parts for garnishing
  • 2 Chilies dried, red, roughly chopped; adjust to your spice preference
  • 3 tbsp Schezwan Sauce store-bought or homemade
  • 1/2 tsp Salt or to taste
  • 2 tbsp Oil vegetable or canola oil
  • 1 tsp Soy Sauce enhances the savory flavor, optional

Instructions
 

Prepare the Potatoes

  • Boil the baby potatoes until tender but still firm. Peel and set aside.

Sauté Aromatics

  • Heat oil in a wok or large skillet over medium heat. Add the chopped onions and sauté until softened, about 3-5 minutes.
  • Add the bell pepper and dried red chilies. Continue to sauté for another 3-5 minutes, until the peppers are slightly tender-crisp.

Combine and Simmer

  • Add the boiled potatoes and salt to the wok. Stir to combine and cook for 1-2 minutes, stirring constantly, until heated through.
  • Stir in the Schezwan sauce and soy sauce (if using). Cook for 2-3 minutes over low heat, allowing the flavors to meld.
