  • In a pan, heat 1 tablespoon of oil. Add the carom seeds and gram flour. Roast for 2 minutes over medium heat until fragrant. This step enhances the nutty flavor of the gram flour and adds a subtle earthiness to the dish. Transfer the roasted mixture to a mixing bowl.
  • To the bowl with the roasted gram flour, add the remaining marinade ingredients: yogurt, ginger paste, garlic paste, salt, red chili powder, turmeric powder, ground coriander, garam masala, mustard powder, and the remaining 1 tablespoon of oil.
  • Add the drained cauliflower florets to the marinade. Gently mix until each floret is evenly coated.
  • Allow the cauliflower to marinate for at least 15-20 minutes. This allows the flavors to meld and the cauliflower to tenderize.
  • Preheat a non-stick pan or griddle over medium-high heat. Grease lightly with oil.
  • Place the marinated cauliflower florets in the hot pan, ensuring they are not overcrowded. Grill for about 5-7 minutes on each side, or until golden brown and slightly charred. Turning them ensures even cooking and a beautiful caramelization.
