Ingredients
- 750 gm Chicken bone less
- 3 no Lemon Juice
- 1 cup Yogurt or curd hang curd
- 1 tsp Garlic Paste
- 1 tsp Ginger Paste
- 2 tsp Chili Powder kashmiri, red
- ½ tsp Garam Masala
- 1/4 tsp Coriander
- Pinch Cardamom Powder
- Pinch Cloves powder
- 1/2 tsp Chaat Masala
- 2 tsp Mustard Oil
- Oil for basting
- 1-2 tsp Salt or as per taste
Instructions
Prepare the Chicken
- Clean the chicken, remove the skin, and cut into 1.5-inch cubes.
First Marinade
- In a bowl, combine 1 tablespoon of Kashmiri chili powder, 1 teaspoon of salt, 1 tablespoon of ginger paste, and 1 tablespoon of garlic paste. Mix well and apply this mixture to the chicken pieces. Marinate for at least 30 minutes, or preferably longer in the refrigerator.
Yogurt Marinade
- In a separate bowl, combine the yogurt, remaining Kashmiri chili powder, remaining salt, lemon juice, garam masala, ground coriander, cardamom, cloves, chaat masala, and mustard oil. Mix thoroughly.
Combine & Marinate
- Add the marinated chicken pieces to the yogurt mixture and stir gently to ensure all the chicken is evenly coated. Marinate for at least 2 hours, or preferably overnight in the refrigerator for maximum flavor.
Skewer and Grill/Bake
- Thread the chicken pieces onto skewers. If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 400°F (200°C).
Cooking
- Grill or bake the chicken, basting occasionally with vegetable oil, until cooked through and slightly charred (about 15-20 minutes for grilling, 20-25 minutes for baking).
Final Touches
- Remove the chicken from the skewers and place in a bowl. Sprinkle with the remaining chaat masala and a squeeze of fresh lemon juice. Toss gently.
