  • 500 gm Cauliflower cut into florets
  • 2 Potato large, peeled and diced
  • 1 cup Peas fresh or frozen, green
  • 1 medium Onion finely chopped

Prepare the Vegetables

  • Blanch the cauliflower florets in hot, salted water for 10 minutes. Meanwhile, peel and dice the potatoes. Rinse both vegetables under cold water.

Sauté Aromatics and Spices

  • Heat mustard oil in a large pan or kadhai over medium heat. Add fenugreek seeds and let them splutter. Add minced ginger and chopped onion; sauté until softened (about 2-3 minutes).

Cook the Vegetables

  • Add the blanched cauliflower, diced potatoes, and green peas to the pan. Stir-fry for a few minutes until slightly softened.

Simmer and Season

  • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the vegetables evenly. Add 1/2 cup of water, cover and cook on low heat for 5-6 minutes, or until the potatoes and cauliflower are tender.
