Ingredients
Vegetables
- 500 gm Cauliflower cut into florets
- 2 Potato large, peeled and diced
- 1 cup Peas fresh or frozen, green
- 1 medium Onion finely chopped
Spices & Aromatics
- 2 tbsp Mustard Oil
- 1 tsp Ginger finely minced
- 1 tsp Fenugreek Seeds methi dana
- 1.5 tsp Salt or to taste
- 2 tsp Chili Powder adjust to your spice preference, red
- 1 tbsp Coriander Powder dhania
- 1 tbsp Turmeric Powder haldi
Garnish
- 2 tbsp Coriander chopped, fresh
Instructions
Prepare the Vegetables
- Blanch the cauliflower florets in hot, salted water for 10 minutes. Meanwhile, peel and dice the potatoes. Rinse both vegetables under cold water.
Sauté Aromatics and Spices
- Heat mustard oil in a large pan or kadhai over medium heat. Add fenugreek seeds and let them splutter. Add minced ginger and chopped onion; sauté until softened (about 2-3 minutes).
Cook the Vegetables
- Add the blanched cauliflower, diced potatoes, and green peas to the pan. Stir-fry for a few minutes until slightly softened.
Simmer and Season
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the vegetables evenly. Add 1/2 cup of water, cover and cook on low heat for 5-6 minutes, or until the potatoes and cauliflower are tender.
Garnish and Serve
- Garnish with fresh coriander leaves and serve hot with naan, roti, rice, or your favorite Indian bread.
