Ingredients
For the Cauliflower
- 15 florets Cauliflower about 1 medium head
- 3 tbsp Corn Flour
- 5 tbsp All-Purpose Flour
- 1/4 cup Water
- 1 tsp Pepper black, freshly ground
- 1 1/2 tsp Salt
- Oil for deep frying, such as vegetable or canola
For the Manchurian Sauce
- 1/2 cup Scallions thinly sliced, white and green parts separated
- 1 tbsp Garlic minced
- 2 tsp Chilies finely chopped, green
- 2 tsp Ginger minced
- 1 tbsp Corn Flour
- 1 cup Vegetable Stock or water
- 1 tbsp Soy Sauce
- 1 tbsp Tomato Ketchup
- 1 tsp Chili Sauce or to taste, red
- 1 tbsp Vegetable Oil
- 1 1/2 tsp Salt or to taste
Instructions
- Heat oil in a wok or deep fryer to 350°F (175°C). Maintaining the oil temperature is crucial for crispy cauliflower.
- In a bowl, whisk together cornstarch, all-purpose flour, black pepper, and salt.
- Gradually add water to the dry ingredients, whisking constantly to form a smooth batter. The batter should coat the cauliflower without being too thick.
- Add the cauliflower florets to the batter and gently toss to coat evenly.
- Carefully add the battered cauliflower florets to the hot oil in batches, ensuring not to overcrowd the wok. Fry for 3-4 minutes, until lightly golden.
- Remove the cauliflower from the oil and drain on paper towels. This initial frying creates a light crust.
- In a small bowl, whisk together cornstarch with 1/4 cup of water until smooth. This slurry will thicken the sauce.
- In the same wok, heat vegetable oil over medium-high heat. Add the white parts of the scallions, garlic, ginger, and green chilies. Sauté for about 30 seconds until fragrant.
- Add soy sauce, tomato ketchup, red chili sauce, and salt to the wok. Stir to combine.
- Pour in the cornstarch slurry and vegetable stock. Bring the sauce to a simmer, stirring constantly, until it thickens and becomes glossy.
- Return the fried cauliflower to the wok and toss gently to coat in the Manchurian sauce. Ensure every floret is evenly coated.
- Garnish with the green parts of the scallions and extra green chilies (optional). Serve hot as an appetizer.
