Ingredients
 

For the Bhel Puri

  • 2 cup Corn Flakes lightly toasted for added crispness (optional)
  • 1 medium Tomato finely chopped
  • 1 medium Onion finely chopped
  • 1 medium Carrot grated
  • 1 medium Potato peeled, and cubed, boiled
  • 1/2 cup Chickpea Noodle fine deep-fried gram flour noodles
  • 6-8 Papdi crispy lentil wafers, crumbled
  • 1/4 cup Boondi optional; spicy boondi (fried chickpea flour drops) adds extra flavor and texture
  • 2 tbsp Peanuts roasted and lightly salted; optional
  • 1 tbsp Chaat Masala
  • Salt to taste, black

For the Chutney

  • 1 cup Coriander (cilantro)
  • 2-3 Chili jalapenos or serrano peppers; adjust to your spice preference, green
  • 1 tbsp Tamarind Paste or 1 tbsp tamarind pulp soaked in warm water
  • 4 Garlic Cloves
  • 2 tbsp Sugar or 2 tbsp grated jaggery (unrefined cane sugar), brown
  • 1/2 tsp Cumin Seeds (jeera); optional
  • 1/2 tsp Coriander Seeds (dhania); optional
  • 1.5 tsp Salt adjust to taste
  • 1/4 cup Water for blending chutney

Prepare the Chutney

  • Blend coriander leaves, green chilies, tamarind paste, garlic cloves, brown sugar, cumin seeds (optional), coriander seeds (optional), salt, and water in a blender until smooth. Adjust salt to taste.

Combine Ingredients

  • In a large bowl, combine the chopped onions, tomatoes, grated carrots, and boiled potatoes. Add the prepared chutney and mix well.

Assemble the Bhel Puri

  • Just before serving, gently fold in the toasted cornflakes, boondi (if using), and crumbled papdi. Sprinkle with sev, chaat masala, and black salt. Garnish with fresh coriander leaves.
