Ingredients
For the Noodles
- 3 cup Noodles fried; any type of thin noodle works well, such as chow mein or egg noodles
For the Vegetable Stir-fry
- 1 tbsp Vegetable Oil
- 2 tsp Garlic minced
- 1/4 cup Spring Onions finely chopped, white and light green parts separated
- 1/2 cup Bell Peppers capsicum, thinly sliced
- 1/2 cup Carrot julienned
- 1 cup Cabbage shredded
For the Sauce
- 1/4 cup Szechuan Sauce
- 1/4 cup Tomato Ketchup
- 1.5 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground
For Garnishing
- 2 tbsp Spring Onions finely chopped, green parts only
- 1/4 cup Cabbage shredded
Instructions
Prepare the Vegetable Stir-fry
- Heat vegetable oil in a wok or large skillet over high heat. Add minced garlic and sauté for a few seconds until fragrant.
- Add the white parts of the spring onions, bell pepper, carrots, and cabbage. Stir-fry for about 30 seconds until slightly softened.
- Stir in Szechuan sauce, tomato ketchup, salt, and black pepper. Mix well and cook for another few seconds until heated through.
- Remove from heat and transfer the vegetable mixture to a large bowl.
Combine with Noodles
- Add the fried noodles to the bowl with the vegetables. Toss gently to combine thoroughly. Ensure all noodles are coated with the sauce.
