Preparing the Lamb Brains

  • Carefully rinse the lamb brains under cold running water. Soak them in a mixture of 1 tbsp of white vinegar and 1 quart of cold water for at least 30 minutes to remove any impurities. Drain thoroughly and mince into very fine pieces.

Preparing the Vegetables and Spices

  • Finely chop the onion. Wash and finely chop the coriander leaves.

Combining the Ingredients

  • In a large bowl, crack and whisk the eggs until light and fluffy. Add the minced lamb brains, chopped onion, turmeric powder, chili powder, garam masala, pepper powder, chopped coriander, and salt. Mix well until all ingredients are thoroughly combined.

Cooking the Omelette

  • Heat the vegetable oil in a flat pan or skillet over medium heat. Pour the egg and brain mixture into the hot pan. Drizzle a little oil around the edges. Cover the pan and cook on low heat for about 5 minutes, or until the top begins to set and the bottom is golden brown.
  • Carefully flip the omelette and cook for another 3-4 minutes, or until cooked through and golden brown.
