Prepare the Spice Powder

  • Dry roast red chilies, coriander seeds, cumin seeds, fenugreek seeds, and mustard seeds in a pan over low heat for 5 minutes. Add urad dal and chana dal; roast until light golden. Stir in sesame seeds and grated coconut; roast until golden brown. Cool completely, then coarsely grind in a blender.

Cook the Cabbage

  • Heat oil in a pan. Add asafoetida and cumin seeds; sauté until fragrant. Add cabbage and tomatoes, turmeric powder, chili powder, and salt. Cover and cook over low-medium heat for 20-30 minutes, stirring occasionally. Remove lid and sauté for 5-7 minutes to evaporate excess water.

Prepare the Tempering and Assemble

  • Heat oil in a separate pan. Add mustard seeds; sauté until they splutter. Add roasted chana dal, peanuts, curry powder, ginger, and green chilies. Sauté for 2-3 minutes.
  • Add cooked rice and cabbage to the tempering. Stir in 2 tbsp of the prepared spice powder. Cook for 2-3 minutes, until well combined.
  • Remove from heat. Stir in lemon juice. Cover and let rest for 2-3 minutes to allow flavors to meld.

Serve

  • Serve hot, optionally with yogurt or raita.
