Ingredients
Rice & Protein
- 1 cup Basmati Rice cooked according to package directions
- 10 Large Prawns peeled, and patted dry, deveined
Aromatics & Vegetables
- 1 medium Onion finely chopped
- 1 inch Ginger minced
- 2 clove Garlic minced
- 3-4 Chilies slit lengthwise, adjust to your spice preference, green
- 1/2 cup Beans trimmed and thinly sliced, green
- 1/2 cup Spring Onions finely chopped, separate white and green parts
- 1/2 cup Bell Peppers capsicum, chopped
Sauces & Seasoning
- 2 tbsp Vegetable Oil
- 1 tbsp Butter
- 1 tbsp Tomato Ketchup
- 2 tbsp Schezwan Sauce
- 1 tsp Chili Sauce green
- 1 tsp Vinegar white
- 1 tsp Soy Sauce
- 1 tsp Fish Sauce adds depth of flavor, optional
- 1.5 tsp Salt or to taste
- 1/2 tsp Pepper or to taste, black
Instructions
Prepare the Prawns
- Marinate the prawns with salt and pepper.
- Heat butter in a pan and pan-fry the prawns until they turn pink and opaque. Do not overcook.
- Set aside.
Sauté Aromatics and Vegetables
- Heat oil in a wok or large skillet over high heat.
- Add the minced ginger and garlic and sauté until fragrant (about 30 seconds).
- Add the chopped onion and green chilies. Stir-fry until the onions soften and become translucent.
- Add the green beans and spring onion whites. Stir-fry for 1-2 minutes.
- Add the bell pepper and stir-fry for another minute.
Combine and Finish
- Add the tomato ketchup, Schezwan sauce, green chili sauce, vinegar, soy sauce, and fish sauce (if using) to the wok. Stir to combine.
- Add the cooked basmati rice and stir-fry for 1 minute to heat through.
- Add the cooked prawns and stir gently to combine all ingredients.
- Cover and cook for 2 minutes to allow the flavors to meld.
- Stir once more, then garnish with the spring onion greens.
