  • 1 tbsp Sugar or jaggery for a more traditional taste
  • Salt to taste
  • 1/2 tsp Oil vegetable or coconut oil preferred

Instructions
 

Prepare the Banana Peel

  • Soak the peeled raw banana pieces in a mixture of 1 cup of water and 1 teaspoon of turmeric powder for 5 minutes. Pressure cook the soaked peels with 1 cup of water for 1 whistle.

Sauté the Spices

  • Heat the oil in a pan. Add the cumin seeds and dry red chilies. Sauté for 1 minute until fragrant.

Combine and Cook

  • Add the pressure-cooked banana peels to the pan. Sauté for 3-5 minutes until most of the moisture evaporates and the peels are slightly dry.

Blend and Season

  • Remove from heat and let the mixture cool. Add tamarind paste, sugar, and salt. Blend the mixture to a smooth paste using a blender or food processor.
