Ingredients

- 1 tbsp Cumin Seeds jeera
- 1/2 tsp Asafoetida hing, heeng
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Chili Powder adjust to taste, red
- 8 leaves Curry Leaves chopped
Vegetables

- 1 tbsp Coriander dhania, chopped
- 1 tsp Mango Powder amchur powder, dry
- 1 tsp Sugar
- 1.5 tsp Salt or to taste
- 1 tbsp Mustard Oil
- 1/4 cup Water
Instructions
Sauté Aromatics
- Heat mustard oil in a pan. Add asafoetida, turmeric powder, and chopped garlic. Sauté over medium heat until the garlic is cooked and the raw smell disappears.
Cook Onions
- Add chopped onions and cook for a couple of minutes until translucent and lightly browned.
Add Tomatoes and Spices
- Add chopped tomatoes, finely chopped red chilies, cumin seeds, and curry leaves. Sauté for 4-5 minutes until tomatoes soften and begin to release oil.
Incorporate Remaining Ingredients
- Stir in chopped coriander, sugar, salt, red chili powder, and dry mango powder. Sauté for a couple of minutes until spices are fragrant. Add 1/4 cup of water, cover the pan, and simmer on low heat for 4-5 minutes.
Finish and Serve
- Once the chutney thickens and oil separates, remove from heat and let cool slightly. Serve the chili garlic chutney with your favorite bread or use as a condiment. You can blend it for a smoother consistency, or leave it chunky as desired.
