Ingredients
Salmon & Marinade
- 360 gm Salmon Fillets approximately 3 salmon fillets, about 120g each
- 5 clove Garlic minced
- 2-4 Chili Peppers finely chopped; adjust quantity to your spice preference. consider using a mix of red chili and milder varieties for balanced heat.
- 1 bunch Coriander fresh, roughly chopped
- 2 Tomatoes medium-sized, diced
- 1/4 cup Lemon Juice freshly squeezed
- 1 tbsp Olive Oil
- 3 Basil Leaves fresh, roughly chopped
- 1/2 tsp Salt
- 1/4 tsp Pepper freshly ground, black
Instructions
Marinate the Salmon
- Finely chop the garlic, chili peppers, coriander, tomatoes, and basil. In a bowl, combine the chopped ingredients with the lemon juice, olive oil, salt, and pepper. Add the salmon fillets and ensure they are well coated in the marinade. Marinate for at least 1-2 hours, or preferably longer in the refrigerator.
Preheat Oven & Prepare for Baking
- Preheat your oven to 190°C (374°F) for 10 minutes.
Bake the Salmon
- There are two options for baking:
- 1. Wrap each salmon fillet individually in aluminum foil, sealing tightly to create individual packets. Bake for 10-15 minutes.
- 2. Place the marinated salmon fillets in a disposable aluminum foil baking dish. Bake for 10-15 minutes.
Prepare Garnish (Optional)
- Boil the carrots and green beans until tender. Drain and set aside.
Serve
- Once the salmon is cooked through, remove from the oven. Garnish with the boiled carrots and green beans (optional). Serve hot.
