Prepare the Coriander-Spice Paste

  • Grind together the coriander, cinnamon, cloves, garlic, ginger, green chilies, and coconut into a smooth paste using a little water.

Prepare the Rice

  • Soak the basmati rice in water for 20 minutes. Drain thoroughly.

Cook the Rice

  • Heat the ghee in a pan or pot over medium heat. Add the drained rice and sauté for 2-3 minutes, stirring constantly, until the rice is coated with ghee.
  • Add the coriander-spice paste and salt to the rice. Mix well.
  • Pour in 3 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked through and the water is absorbed. If using a pressure cooker, cook for one whistle after the pressure builds up. The rice should be fluffy and the grains should be separate.

Combine and Serve

  • Gently fluff the cooked rice with a fork. Garnish with freshly chopped coriander leaves. Serve hot with raita (yogurt dip) or your favorite side dish.
