Ingredients
Noodles & Sauce
- 200 gm Wheat Atta Noodles whole
- 2 tbsp Schezwan Sauce
- 2 tbsp Garlic Chili Sauce
Vegetables
- 2 Spring Onions finely chopped
- 1/2 cup Carrots finely chopped
- 1/2 cup Bell Peppers bell pepper, finely chopped
Aromatics & Seasoning
- 1 tsp Garlic Paste
- 3 tbsp Olive Oil
- 1.5 tsp Salt or to taste
- 1 tsp Pepper black, freshly ground, optional
Egg Decoration
- 2 Eggs hard-boiled
- 2 thin Tomato Slices
- 1 small Carrot for egg face
- 2 Cloves for egg eyes
Instructions
Prepare the Noodles
- Heat water in a pan; add a pinch of salt and 1 tbsp oil. Add noodles and boil until tender. Drain and rinse with cold water. Toss with 2 tbsp olive oil, Schezwan sauce, and garlic chili sauce.
Sauté the Vegetables
- Heat remaining 2 tbsp olive oil in a pan. Add garlic paste and sauté for 1 minute. Add spring onions, carrots, and capsicum. Stir-fry until crisp-tender over high heat.
Combine and Cook
- Add the boiled noodles to the pan with the vegetables. Cook for 3-4 minutes over high heat, stirring constantly. Season with salt and pepper.
Assemble the Egg Faces
- Place noodles on plates. Peel hard-boiled eggs and place in the center of each plate. Cut a tiny carrot slice for a mouth and use cloves for eyes. Top with tomato slices as a hat.
