Ingredients
Noodles & Vegetables
- 8 oz Noodles dried, your choice of shape; boiled according to package directions
- 1 cup Carrot finely chopped
- 1/2 cup Onion finely chopped
- 1 cup Cabbage finely shredded
- 1 cup Bell Peppers capsicum, finely chopped
Spices & Seasoning
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Chili Powder adjust to your spice preference, red
- 1 tbsp Sambar Powder
- 1 tsp Salt or to taste
Sauce & Oil
- 2 tbsp Tamarind Paste or 1 tbsp tamarind concentrate diluted in 2 tbsp water; imli ka pani
- 1/4 tsp Mustard Seeds rai, black
- 2 tbsp Vegetable Oil or any neutral oil
Instructions
Prepare the Vegetables
- Finely chop the onion, carrot, cabbage, and bell pepper.
Sauté Aromatics
- Heat the oil in a pan or wok over medium heat. Add the black mustard seeds and let them splutter.
Cook Vegetables
- Add the chopped onion and sauté for about 1 minute until softened. Add the carrot, cabbage, and bell pepper; sauté for 2-3 minutes until slightly tender-crisp.
Add Spices and Seasoning
- Stir in the turmeric powder, red chili powder, sambar powder, and salt. Mix well to coat the vegetables evenly and cook for another minute.
