For the Green Chutney

For the Toast

  • 6 slices Bread your choice of bread; whole wheat or brown recommended
  • 2 tbsp Butter for toasting

For the Poached Eggs

  • 2 Egg
  • 1/4 tsp Pepper black, for sprinkling, ground
  • 1 tbsp Water for poaching eggs

Instructions
 

Make the Green Chutney

  • Combine all chutney ingredients in a blender or food processor and blend until smooth. Adjust salt and lemon juice to your liking.

Prepare the Toast

  • Spread the green chutney evenly on one side of each bread slice. Melt butter in a pan over medium heat. Toast the bread, chutney-side down, until golden brown and crispy. Flip and toast the other side briefly.

Poach the Eggs

  • Add a tablespoon of water to the pan, gently crack the eggs into the pan. Cover and cook for 2-3 minutes or until the whites are set and the yolks are still runny. Season with salt and pepper.

Assemble and Serve

  • Place the toasted bread on plates. Top each with a poached egg. Sprinkle with additional black pepper if desired. Serve immediately and enjoy!
