Ingredients
For the Green Chutney
- 1 cup Coriander dhania, fresh cilantro
- 1 inch Ginger fresh
- 2 Chili Pepper adjust to taste, green
- 1 tbsp Pigeon Pea soaked in water for at least 30 minutes, split pigeon peas
- 1.5 tsp Salt or to taste
- 1/2 tbsp Lemon Juice or to taste
For the Toast
Instructions
Make the Green Chutney
- Combine all chutney ingredients in a blender or food processor and blend until smooth. Adjust salt and lemon juice to your liking.
Prepare the Toast
- Spread the green chutney evenly on one side of each bread slice. Melt butter in a pan over medium heat. Toast the bread, chutney-side down, until golden brown and crispy. Flip and toast the other side briefly.
Poach the Eggs
- Add a tablespoon of water to the pan, gently crack the eggs into the pan. Cover and cook for 2-3 minutes or until the whites are set and the yolks are still runny. Season with salt and pepper.
Assemble and Serve
- Place the toasted bread on plates. Top each with a poached egg. Sprinkle with additional black pepper if desired. Serve immediately and enjoy!
