Ingredients
Vegetables
- 500 gm Taro Root also known as arvi or colocasia; peeled and cut into 1-inch cubes
- 1 Large Onion finely chopped
- 2-3 Chilies adjust to taste, finely chopped, green
- 1/4 cup Coriander chopped, for garnish
Spices
- 1 tbsp Carom Seeds ajwain
- 1 tbsp Coriander Powder dhania
- 1 tbsp Mango Powder amchur powder, dry
- 1 tsp Turmeric Powder haldi
- 2 tsp Chili Powder adjust to taste, red
- 1/4 tsp Pepper Powder black
- 1.5 tsp Salt or to taste
Other Ingredients
- 2 tbsp Vegetable Oil or ghee (clarified butter)
- 2 tbsp Lemon Juice freshly squeezed
Instructions
Preparation
- Wash and hard-boil the taro root until tender. Peel and cut into 1-inch cubes.
Sautéing Aromatics
- Heat the oil (or ghee) in a pan or pot over medium heat. Add the carom seeds and let them splutter for a few seconds.
Cooking the Onions and Spices
- Add the finely chopped onions and sauté until golden brown. Then, add the green chilies, turmeric powder, red chili powder, and coriander powder. Cook for about 2 minutes, stirring frequently, until fragrant.
Adding Taro Root and Simmering
- Add the boiled taro root cubes to the pan and mix well to coat them with the spice mixture. Add the dry mango powder and black pepper powder. Stir in the lemon juice.
Finishing Touches
- Simmer for 5 minutes, stirring occasionally, until the flavors have melded and the sauce has slightly thickened. Turn off the heat and garnish with fresh coriander leaves.
