Prepare the Chutney

  • Combine coriander leaves, mint leaves, garlic, green chilies, lemon juice, and salt in a blender.
  • Blend until smooth, adding water as needed to reach desired consistency.
  • Set aside.

Roast the Semolina

  • Heat 1 tbsp of oil in a pan over medium heat. Add the semolina and roast, stirring frequently, until lightly golden.
  • Remove from pan and set aside.

Sauté Vegetables

  • In the same pan, heat the remaining 1 tbsp of oil. Add mustard seeds and let them splutter.
  • Add the spring onions and sauté until softened.
  • Stir in the green peas and bell pepper, sautéing for another 2-3 minutes until slightly tender.

Combine and Cook

  • Add the roasted semolina to the vegetable mixture. Stir in salt and the prepared chutney.
  • Pour in the boiling water, mixing well to combine all ingredients.
  • Adjust seasoning to taste.

Set and Garnish

  • Pour the upma mixture into silicone muffin cups or ramekins. Press down gently to compact.
  • Let it sit for 10 minutes to set.

Tempering

  • Heat 1 tbsp of oil in a small pan. Add mustard seeds, slit green chilies, and cashews. Sauté until fragrant and lightly browned.
  • Carefully remove the upma from the muffin cups. Pour the tempering over the set upma.
  • Garnish with fried cashews and chopped coriander leaves. Serve warm.
