  • Mix the idli/sambhar powder into the yogurt and set aside.

Cook the Dosas

  • Heat a lightly oiled dosa pan or griddle over medium heat. Pour 1/4 cup of dosa batter onto the hot pan, spreading it into a thin, even circle. Cook for 1-2 minutes per side, or until lightly golden brown and cooked through. Repeat until all batter is used, making dosas slightly thicker than usual.

Assemble the Sandwich

  • Place one dosa on a plate. Spread a thin layer of tomato chutney. Top with another dosa and spread a layer of coconut chutney. Continue layering dosas with alternating chutneys and a layer of yogurt mixture. Repeat this process until you have a stack of 5 dosas.
