Ingredients
 

Carrot Preparation

  • 125 ml Ghee
  • 250 ml Milk whole milk preferred
  • 200 gm Sugar adjust to taste
  • 100 gm Heavy Cream or thick cream

  • 50 gm Nuts almonds, cashews, chopped, mixed, raisins

Instructions
 

Prepare the Carrots

  • Grate the carrots finely.

Sauté the Carrots

  • Heat the ghee in a heavy-bottomed pan or kadai over medium heat. Add the grated carrots and sauté for 5-7 minutes, stirring frequently, until they soften slightly.

Simmer with Milk and Sugar

  • Pour in the milk and bring to a simmer. Reduce heat to low, cover, and cook for approximately 30-40 minutes, stirring occasionally, until the carrots are very tender. Add the sugar and stir until dissolved. Continue to cook until most of the liquid has evaporated.

Add Cream and Spices

  • Stir in the heavy cream, cardamom powder, and soaked saffron (if using). Cook for another 15-20 minutes, stirring constantly to prevent sticking.

Finish and Garnish

  • Remove from heat. Stir in the chopped nuts. Serve warm or at room temperature. Garnish with extra nuts if desired.
