Ingredients
Carrot Preparation
- 1000 gm Carrots finely grated
Spices & Flavorings
- 1 tsp Cardamom Powder
- 1/2 tsp Saffron Strands soaked in 2 tbsp warm milk (optional)
Dairy & Sweetener
- 125 ml Ghee
- 250 ml Milk whole milk preferred
- 200 gm Sugar adjust to taste
- 100 gm Heavy Cream or thick cream
Garnish
- 50 gm Nuts almonds, cashews, chopped, mixed, raisins
Instructions
Prepare the Carrots
- Grate the carrots finely.
Sauté the Carrots
- Heat the ghee in a heavy-bottomed pan or kadai over medium heat. Add the grated carrots and sauté for 5-7 minutes, stirring frequently, until they soften slightly.
Simmer with Milk and Sugar
- Pour in the milk and bring to a simmer. Reduce heat to low, cover, and cook for approximately 30-40 minutes, stirring occasionally, until the carrots are very tender. Add the sugar and stir until dissolved. Continue to cook until most of the liquid has evaporated.
Add Cream and Spices
- Stir in the heavy cream, cardamom powder, and soaked saffron (if using). Cook for another 15-20 minutes, stirring constantly to prevent sticking.
Finish and Garnish
- Remove from heat. Stir in the chopped nuts. Serve warm or at room temperature. Garnish with extra nuts if desired.
