Ingredients
Dry Ingredients
- 1 3/4 cup All-Purpose Flour
- 1 tsp Salt
- 3 tsp Sugar
Wet Ingredients
- 1 tsp Active Yeast dissolved in 1/4 cup warm water, dry
- 2 tbsp Yogurt
- 3 tbsp Ghee
- 1 cup Milk plus more as needed for dough consistency
- 1 tbsp Vegetable Oil for brushing the dough
- 1 tbsp Sesame Seeds
Instructions
Prepare the Dough
- Preheat your oven to 400°F (200°C). In a large bowl, sift together the flour and salt. Add the sugar, dissolved yeast, and yogurt. Mix well.
- Add the ghee and gradually incorporate the milk, kneading until a smooth, soft dough forms. If needed, add a little extra milk to achieve the right consistency. Let the dough rise in a warm place for at least 1 hour, or until doubled in size.
Shape and Prepare the Taftan
- Lightly oil the dough and divide it into 8-10 equal portions. Roll each portion into a smooth ball. Then, roll each ball into a slightly oval shape, making the edges slightly thicker than the center.
- Using your fingertips, gently press indentations all over the surface of each Taftan. Place the shaped Taftan onto a baking sheet lined with parchment paper. Sprinkle generously with sesame seeds.
Bake the Taftan
- Bake in the preheated oven for 10-12 minutes, or until golden brown. During the last half of baking, brush the tops with the remaining ghee for extra richness and shine. Remove from the oven and let cool slightly before serving. Serve warm.
Recipe Notes
Expert Tips for Perfect Taftan:
- For extra flavor, use a combination of whole wheat and all-purpose flour.
- Ensure your yeast is fresh and active for optimal rising.
- Don't over-knead the dough; it should be soft and pliable.
- Adjust baking time depending on your oven; keep a close eye to prevent burning.
