Instructions

Prepare the Vegetables

  • Dice all vegetables into bite-sized pieces.
  • Tofu should be cut into cubes.

Marinate the Vegetables

  • In a large bowl, combine all the vegetables and tofu.
  • Add the marinade ingredients (olive oil, BBQ sauce, balsamic vinegar, soy sauce, sesame seeds, Italian herbs, black pepper, salt, and sugar/honey).
  • Toss everything together to ensure all vegetables are evenly coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably longer for deeper flavor.

Prepare the Basting Oil

  • In a small pan, gently heat the olive oil over low heat.
  • Add the toasted black sesame seeds, and stir for about 30 seconds until fragrant.
  • Remove from heat and set aside.

Grill the Vegetables

  • Preheat your grill to medium-high heat.
  • Lightly oil the grill grates to prevent sticking.
  • If using, place vegetables in a grilling basket or thread them onto skewers.
  • Place the vegetables on the preheated grill.
  • Grill for 5-7 minutes per side, or until the vegetables are tender-crisp and slightly charred. Baste with the sesame-infused olive oil halfway through cooking.

Serve

  • Remove from the grill and serve immediately, garnished with fresh chopped parsley.

Recipe Notes

Expert Tips

  • For best results, use high-quality BBQ sauce and balsamic vinegar.
  • Don't overcrowd the grill; this will lower the temperature and result in steaming instead of grilling.
  • Toasting the sesame seeds before adding them to the marinade enhances their nutty flavor and aroma.
  • Feel free to experiment with different vegetables. Asparagus, bell peppers, zucchini, and onions all work well.
