Ingredients
Vegetables
- 1 Eggplant diced
- 1 Bell Peppers diced, red
- 1 Bell Peppers diced, yellow
- 1 Bell Peppers diced, green
- 2 cup Broccoli florets
- 2 Zucchini diced, yellow and green
- 1 Carrot diced
- 1/2 cup Baby Corn diced
- 1/2 cup Mushrooms halved
- 1/2 cup Onion diced, red
- 3/4 cup Tofu cubed (or 3/4 cup cottage cheese)
Marinade
- 1 tbsp Virgin Olive Oil extra
- 1 1/2 tbsp Bbq Sauce
- 2 tbsp Balsamic Vinegar
- 1/2 tbsp Soy Sauce
- 1/2 tsp Sesame Seeds black, lightly toasted
- 1 tsp Italian Herbs dried
- 1/2 tsp Pepper black
- 1/2 tsp Salt or to taste
- 1/2 tsp Sugar or honey, to taste
For Basting
- 1/2 tbsp Olive Oil extra virgin
- 1/4 tsp Sesame Seeds black, lightly toasted
Garnish
- 1/4 bunch Parsley chopped
Instructions
Prepare the Vegetables
- Dice all vegetables into bite-sized pieces.
- Tofu should be cut into cubes.
Marinate the Vegetables
- In a large bowl, combine all the vegetables and tofu.
- Add the marinade ingredients (olive oil, BBQ sauce, balsamic vinegar, soy sauce, sesame seeds, Italian herbs, black pepper, salt, and sugar/honey).
- Toss everything together to ensure all vegetables are evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably longer for deeper flavor.
Prepare the Basting Oil
- In a small pan, gently heat the olive oil over low heat.
- Add the toasted black sesame seeds, and stir for about 30 seconds until fragrant.
- Remove from heat and set aside.
Grill the Vegetables
- Preheat your grill to medium-high heat.
- Lightly oil the grill grates to prevent sticking.
- If using, place vegetables in a grilling basket or thread them onto skewers.
- Place the vegetables on the preheated grill.
- Grill for 5-7 minutes per side, or until the vegetables are tender-crisp and slightly charred. Baste with the sesame-infused olive oil halfway through cooking.
Serve
- Remove from the grill and serve immediately, garnished with fresh chopped parsley.
