Ingredients
Paneer Mixture
- 1 cup Cottage Cheese grated
- 1/4 cup Onion finely chopped
- 2 tbsp Garlic minced
- 1 tbsp Ginger minced
- 1 tbsp Scallions chopped
- 1 tbsp Sichuan Sauce
- 1 1/2 tsp Chili Oil
- 1/2 tsp Salt or to taste
- 1/4 tsp Pepper black, freshly ground
Coating
- 1/2 cup Breadcrumb
- 1 tbsp Garlic Powder
- 1 tbsp Paprika
- 1 tbsp Corn Flour
- 1/4 cup Water
Frying & Dipping Sauce
- 1 cup Oil for frying
- 1/2 cup Mayonnaise
- 1 tbsp Barbecue Sauce
- 1 tbsp Chili Sauce
Instructions
- Lightly mash the paneer with the heel of your hand. This helps create a softer texture for the popcorn bites.
- Heat oil in a pan over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and ginger, and sauté until fragrant, about 30 seconds. This builds a flavorful base for the paneer.
- Add the mashed paneer, chopped scallions, Sichuan sauce, chili oil, salt, and pepper to the pan. Mix well to combine all the flavors.
- In a small bowl, whisk together the cornstarch and water until a smooth slurry forms. This will help the breadcrumbs adhere to the paneer and create a crispy coating.
- In another bowl, combine the breadcrumbs, garlic powder, and paprika. Mix well.
- Shape the paneer mixture into small, bite-sized balls. Dip each ball into the cornstarch slurry, ensuring it's fully coated. Then, roll the coated paneer ball in the breadcrumb mixture, pressing gently to ensure the crumbs adhere evenly.
- Heat the oil for frying in a deep pan or pot over medium-high heat. Carefully add the coated paneer balls to the hot oil and fry until golden brown and crispy, about 2-3 minutes. Fry in batches to avoid overcrowding the pan and ensure even cooking.
- While the paneer popcorn is frying, prepare the dipping sauce. Combine the mayonnaise, barbecue sauce, and chili sauce in a small bowl. Mix well.
- Remove the crispy paneer popcorn from the oil and place on a paper towel-lined plate to drain excess oil. Serve immediately with the dipping sauce for a hot and flavorful snack.
Recipe Notes
Good To Know
- For extra crunch, double-coat the paneer cubes by dipping them in the batter and breadcrumbs twice before frying.
- If you prefer a smokier flavor, briefly toss the fried paneer popcorn with smoked paprika or liquid smoke while they're still hot.
- For a vegan version, substitute paneer with firm tofu (pressed to remove excess moisture) and use an egg-free batter and coating.
- Serve on shredded cabbage or lettuce and garnish with sliced spring onions and sesame seeds for added freshness and crunch.
Expert Tips
- Don't overcrowd the pan while frying; this will lower the oil temperature and result in soggy paneer. Fry in batches for optimal crispiness.
- Experiment with different seasonings in the batter or breading, such as garlic powder, onion powder, or chili flakes, to customize the flavor profile.
- Serve with a variety of dipping sauces, such as mint chutney, tamarind chutney, or a spicy mayonnaise-based dip.
Storage Instructions
- Paneer popcorn is best enjoyed fresh. However, leftover paneer can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a preheated oven or air fryer for a few minutes to restore crispness.
