  • Rinse and cut chicken thighs into bite-sized pieces. In a bowl, combine chicken with egg, cornstarch, 1.5 tsp salt, pepper, and dark soy sauce. Marinate for at least 30 minutes.

Deep Fry the Chicken

  • Heat vegetable oil in a wok or large pan over high heat. Add marinated chicken and cook until golden brown and crispy, stirring occasionally to ensure even cooking. Remove chicken and set aside.

Prepare the Sauce

  • Keep about 1 tablespoon of oil in the wok. Add Sichuan peppercorns and cook for 1 minute. Add peanuts and cook for a few minutes on medium low until fragrant. Add ginger and garlic and cook for another minute. Add dried red chilies, spring onions, and coriander; stir for 1 minute.

Combine and Finish

  • Increase heat to high, add the cooked chicken, sugar, and 1.5 tsp salt. Stir-fry until any liquid has evaporated.

Garnish and Serve

  • Garnish with sesame seeds and serve immediately with steamed jasmine rice and your favorite vegetable side dish.
