Prepare the Chicken Meatballs

  • Mix ground chicken, egg white, minced ginger, minced garlic, salt, red pepper flakes, black pepper, and cornstarch in a bowl. Mix well and let it rest for 15 minutes.
  • Shape the mixture into small meatballs (about 1 inch in diameter).

Fry the Meatballs

  • Heat vegetable oil in a pan over medium-high heat. Deep fry the meatballs until golden brown and cooked through. Remove from pan and set aside.

Make the Sichuan Gravy

  • In a separate pan, whisk together cornstarch and water to create a slurry. Set aside.
  • Heat 1 tbsp of vegetable oil in the same pan. Add minced ginger and garlic and sauté for 20 seconds on low heat.
  • Add the scallions and sauté until softened and translucent.
  • Stir in salt, soy sauce, rice vinegar, and Sichuan chili oil. Bring to a simmer.
  • Slowly whisk in the cornstarch slurry until the gravy thickens to your desired consistency.
  • Add the fried meatballs to the gravy. Toss gently to coat evenly.

Serve

  • Garnish with chopped scallions. Serve hot as an appetizer or main course.
