Ingredients
 

Vermicelli & Vegetables

Spices & Aromatics

  • 1.5 tsp Salt or to taste
  • 1 tsp Chili Powder adjust to your spice preference, red
  • 1 tbsp Onion finely chopped
  • 1 tbsp Chili finely chopped; adjust to your spice preference, green
  • 1 tsp Cumin Seeds jeera

Instructions
 

Preparing the Vermicelli

  • Heat ghee in a pan. Add vermicelli and fry until golden brown. Set aside.

Sautéing Aromatics and Vegetables

  • Heat oil in the same pan. Add cumin seeds and sauté until they splutter. Add finely chopped onions and green chilies; sauté until lightly browned.

Cooking Potatoes and Peas

  • Add diced potatoes and green peas to the pan. Stir in salt and red chili powder. Add 2 tablespoons of water, cover, and cook until potatoes are tender.

Combining and Simmering

  • Add the roasted vermicelli to the potato and pea mixture. Stir well. Add 1/2 cup water, cover, and cook on low heat for 5-6 minutes, or until the vermicelli is heated through and the flavors have melded.

Finishing and Serving

  • Stir in lemon juice and fresh coriander leaves. Remove from heat. Serve hot with tea or coffee. Garnish with sev and tomato ketchup as desired.
