Ingredients
Noodles & Spices
- 1 7 oz Noodles any type of thin noodle will work. yippee! noodles are recommended
- 1 packet Magic Masala yippee! noodle seasoning packet
- 1/4 tsp Chili powder
Dry Ingredients
- 1 cup All-purpose flour also known as maida
- 1/2 tsp Baking soda
- 1/2 tsp Salt
Serving Suggestions
- Mayonnaise or tomato ketchup for serving
Instructions
Prepare the Carrots
- Peel and grate one medium carrot. Set aside.
Cook the Noodles
- Bring water to a boil. Add 7oz of noodles (Yippee! noodles recommended) and cook according to package directions (usually about 2 minutes). Drain well and rinse under cold water. Set aside.
Make the Batter
- In a large bowl, whisk together 1 cup all-purpose flour, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1/4 teaspoon chili powder, 2 eggs, and 1/2 cup milk until smooth. Stir in 3 tablespoons of melted butter.
Add Spices and Noodles
- Add the Yippee! Magic Masala packet and the cooked noodles to the batter. Mix well to combine.
Cook the Pancakes
- Heat a lightly oiled griddle or frying pan over medium heat. Add 1/4 cup of batter for each pancake and spread slightly. Cook for 2-3 minutes per side, or until golden brown.
