Ingredients
 

Vegetables

  • 1 cup Vegetables chopped (e.g., bell peppers, carrots, mixed, onions), zucchini
  • 1/2 cup Beetroot diced, cooked

Herbs & Spices

  • 2 tbsp Herbs chopped (e.g., chives, fresh, parsley, thyme)
  • 1/2 tsp Pepper freshly ground, black
  • 1.5 tsp Salt or to taste

Bread & Dairy

  • 4 slices Bread your favorite bread, preferably hearty
  • 25 gm Butter
  • 2 tbsp Cream for garnish, fresh

Instructions
 

Prepare the Vegetable Filling

  • Sauté the chopped mixed vegetables, beetroot, herbs, salt, and pepper in a frying pan with 1 tablespoon of butter until softened. Set aside.

Toast the Bread

  • In a separate frying pan, melt the remaining butter and toast the bread slices on both sides until lightly golden.

Assemble the Quick Bread

  • Spread the vegetable mixture evenly over two slices of toasted bread. Top with the remaining bread slices.
