  • Wash and chop the mast mushrooms. Heat the oil in a pan over medium heat. Add the whole garlic cloves and sauté for a few minutes until fragrant and lightly golden. This infuses the oil with garlic flavor.

  • Add the sliced onions and chopped bell pepper to the pan. Sauté for 5-7 minutes, until the onions are translucent and the bell pepper is slightly softened.
  • Add the chopped mushrooms and ginger paste to the pan. Stir well to combine.
  • Add the ground coriander, cumin seeds, red chili powder, garam masala, and red curry paste. Sauté for another minute until fragrant, stirring constantly to prevent burning.
