- 1 medium Potato boiled and mashed
- 1 ½ tsp Salt or to taste
For the Vegetable Filling

- 1 tsp Garam Masala
- 1 tbsp Fruit Vinegar
- ½ tsp Salt
For the Egg Chapati
- 2 large Eggs beaten
Instructions
- In a large bowl, combine the whole wheat flour, mashed potato, and salt. Mix well and gradually add water to form a soft, pliable dough. Knead for 5-7 minutes until smooth and elastic. This develops the gluten, resulting in softer chapatis. Cover and let rest for at least 15 minutes.
- Heat oil in a pan over medium heat. Add the chopped mixed vegetables and sauté until slightly softened. Add garam masala, fruit vinegar, and salt. Sauté for another 2-3 minutes until the vegetables are tender-crisp and fragrant. Set aside.
- Divide the dough into 2 equal portions. Roll each portion into a thin circle on a lightly floured surface.
- Heat a flat griddle or tawa over medium heat. Cook each chapati for 1-2 minutes per side, or until lightly browned and cooked through.
- For the first serving option, spread half of the sautéed vegetables over one chapati. Pour half of the beaten egg over the vegetables. Cook for 2-3 minutes, or until the egg is set. Fold the chapati in half and serve.
- For the second serving option, place one chapati on a plate. Pour half of the beaten egg over the chapati. Spread half of the sautéed vegetables over the egg. Top with another chapati. You can either fold this double-decker chapati or cut it into wedges. Serve hot with your favorite chutney or sauce.
