Ingredients
Dried Mushrooms
- 2 packets Porcini Mushrooms dried
Fresh Mushrooms and Leeks
- 1 Leek medium, thinly sliced
- 1/2 cup Button Mushrooms sliced
- 1 lb Cremini Mushrooms sliced

Gnocchi
- 1 package Shelf-Stable Potato Gnocchi
Instructions
- Soak the dried porcini mushrooms in boiling water for 15 minutes, or until softened. Drain the mushrooms, discarding the liquid, and squeeze out any excess water.
- In a large Dutch oven or pot, melt the butter over medium heat. Add the sliced leeks and minced garlic. Sauté for 2 minutes, until fragrant and slightly softened. Remove the leek mixture from the pot and set aside.
- Add the olive oil to the Dutch oven and heat over medium-high heat. Add the sliced button, cremini, and rehydrated porcini mushrooms. Sauté for about 15 minutes, stirring occasionally, until the mushrooms are lightly browned and any released liquid has evaporated. This allows the mushrooms to develop deep savory flavors.
- Pour in the dry white wine, scraping the bottom of the pot to loosen any browned bits. This deglazing process adds depth of flavor to the sauce. Season with salt and pepper.
