For the Idli Muffins

Vegetables

  • 1 cup Vegetables beans, boiled and chopped (potato, carrot, mixed, peas)
  • 1/8 tsp Turmeric
  • 1/4 tsp Chili Powder
  • 1 tsp Chili finely chopped (optional), green
  • 1 1/2 tsp Salt or to taste

For the Coconut Chutney

  • Heat 1 tablespoon of oil in a pan over medium heat. Add the onions and sauté until translucent. This allows the onions to sweeten and develop flavor.
  • Add the chili powder and turmeric powder. Cook for a minute until fragrant, stirring constantly to prevent burning.
  • Add the boiled mixed vegetables and salt. Sauté for a few minutes until heated through and well combined.
  • In a large bowl, combine the millet batter and the vegetable mixture. Mix well to ensure the vegetables are evenly distributed.

  • If the batter is too thick, add a little water, 1 tablespoon at a time, until you reach a pourable consistency.
  • Preheat oven to 350°F (175°C). Grease a muffin tin with the remaining oil or line with paper liners. This prevents the muffins from sticking.
  • Pour the batter into the prepared muffin tin, filling each cup about two-thirds full. This allows room for the muffins to rise.

  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. This ensures the muffins are cooked through.
  • While the muffins are baking, prepare the coconut chutney. In a blender or food processor, combine the grated coconut, roasted gram, dried red chilies, curry leaves, garlic, and a pinch of salt.
  • Add a little water and blend until you achieve a smooth, thick chutney. The amount of water will depend on your desired consistency.
  • Once the muffins are baked, let them cool slightly in the tin before removing. Top with the coconut chutney and serve warm. Enjoy!

  • To make millet batter:
    • Ingredients:
      • Thinai/foxtail millet - 1 cup
      • Samai/little millet - 1 cup
      • Whole Urad dal - 1/2 cup
      • Vendhayam/fenugreek seeds - 1 tsp
      • Salt to taste
    • Method:
      • Wash and soak millets and dal separately in water for 4-5 hours. Soak fenugreek seeds along with dal.
      • Grind urad dal until light and fluffy, adding water from time to time.
      • Grind millets, adding water a little at a time, to a slightly coarse batter.
      • Mix both batters, add salt as needed, and allow to ferment. Grind it the same way as you grind for regular idlis. The batter should not be too thick nor too thin.
      • Fermenting time differs according to weather conditions.
    • Use the batter for idli the very next day, or else use it as a dosa batter.
  • For extra crunch, sprinkle toasted sesame seeds or crushed roasted peanuts on top before baking.
  • For a dairy-free coconut chutney, use coconut milk for creaminess and lemon juice for brightness instead of yogurt.
  • To make muffins more appealing to kids, use fun-shaped silicone molds and let them choose veggie mix-ins.
  • Leftover muffins can be refrigerated for up to 3 days. Reheat in an oven or air fryer before serving.
