Vegetables

  • 1/2 cup Vegetables chopped; suggestions: carrots, etc., green beans, mixed, peas
  • 5 Shallots finely chopped
  • 2-3 Chilies deseeded and finely chopped, green
  • ¼ inch Ginger finely grated

Instructions
 

Prepare the Batter

  • Add baking soda, salt, and red chili powder to the idli batter. Mix well.

Sauté Vegetables

  • In a small pan, sauté the shallots, green chilies, and ginger in 1/2 tbsp ghee until softened. Add the mixed vegetables and cook until tender-crisp.

Temper the Spices

  • In the same pan, add the remaining 1/2 tbsp ghee. Add mustard seeds, urad dal, chana dal, cumin seeds, and asafoetida. Sauté until the dals are lightly golden and fragrant.

Combine and Season

  • Add the sautéed vegetables and spiced dal mixture to the idli batter. Stir well to combine. Taste and adjust salt and spice levels as needed.

Microwave the Muffins

  • Lightly grease microwave-safe muffin cups with ghee. Fill each cup about ¾ full with the batter.

Cook and Serve

  • Microwave on high for 7-8 minutes, or until the muffins are cooked through and spring back when lightly touched. Let cool slightly before serving.
