Ingredients
Wet Ingredients
- 1 cup Idli Batter
- 1 tbsp Chili Powder red
- 1/8 tsp Baking Soda
Vegetables
- 1/2 cup Vegetables chopped; suggestions: carrots, etc., green beans, mixed, peas
- 5 Shallots finely chopped
- 2-3 Chilies deseeded and finely chopped, green
- ¼ inch Ginger finely grated
Seasoning & Spices
- 1/2 tsp Salt adjust to taste
- 1/2 tsp Mustard Seeds
- 1/2 tsp Lentils black, split black lentils
- 1/2 tsp Chickpeas split chickpeas
- 1/2 tsp Cumin Seeds
- 1/2 tsp Asafoetida hing
Fats & Oils
- 1 tbsp Clarified Butter or substitute with oil or butter
Instructions
Prepare the Batter
- Add baking soda, salt, and red chili powder to the idli batter. Mix well.
Sauté Vegetables
- In a small pan, sauté the shallots, green chilies, and ginger in 1/2 tbsp ghee until softened. Add the mixed vegetables and cook until tender-crisp.
Temper the Spices
- In the same pan, add the remaining 1/2 tbsp ghee. Add mustard seeds, urad dal, chana dal, cumin seeds, and asafoetida. Sauté until the dals are lightly golden and fragrant.
Combine and Season
- Add the sautéed vegetables and spiced dal mixture to the idli batter. Stir well to combine. Taste and adjust salt and spice levels as needed.
Microwave the Muffins
- Lightly grease microwave-safe muffin cups with ghee. Fill each cup about ¾ full with the batter.
Cook and Serve
- Microwave on high for 7-8 minutes, or until the muffins are cooked through and spring back when lightly touched. Let cool slightly before serving.
