Ingredients
Tapioca and Vegetables
- 2 cup Tapioca Pearls and mashed, cooked, drained
- 1/2 cup Carrot finely grated
- 1/2 cup Coconut finely grated, unsweetened
- 3 Chilies finely chopped (adjust to your spice preference), green
- 10 Shallots finely chopped
- 1 sprig Curry Leaves
Binding and Flavor
- 3 Eggs beaten, large
- 1/2 cup Vegetable Oil
- 2-3 tbsp Milk or water, to adjust batter consistency
- 1/2 tsp Salt or to taste
- 1/2 cup Cheddar Cheese finely grated
- 1/2 tsp Baking Powder for better rise
Instructions
Prepare the Tapioca
- Cook tapioca pearls according to package directions until tender. Drain well and mash thoroughly.
Combine Ingredients
- In a large bowl, combine the mashed tapioca, grated carrot, coconut, green chilies, shallots, and curry leaves. Mix well.
Add Wet Ingredients
- Add the beaten eggs and vegetable oil to the tapioca mixture. Stir to combine.
Adjust Consistency
- Gradually add milk (or water) until you achieve a slightly thick but pourable batter. Stir in salt and baking powder.
Preheat Oven & Prepare Muffin Tin
- Preheat your oven to 350°F (180°C). Grease a 12-cup muffin tin or line it with paper liners.
Bake the Muffins
- Fill each muffin cup about ¾ full with the batter.
Add Cheese & Finish Baking
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Three minutes before the muffins are done, sprinkle the grated cheddar cheese over the tops.
