  • Cook tapioca pearls according to package directions until tender. Drain well and mash thoroughly.

Combine Ingredients

  • In a large bowl, combine the mashed tapioca, grated carrot, coconut, green chilies, shallots, and curry leaves. Mix well.

Add Wet Ingredients

  • Add the beaten eggs and vegetable oil to the tapioca mixture. Stir to combine.

Adjust Consistency

  • Gradually add milk (or water) until you achieve a slightly thick but pourable batter. Stir in salt and baking powder.

Preheat Oven & Prepare Muffin Tin

  • Preheat your oven to 350°F (180°C). Grease a 12-cup muffin tin or line it with paper liners.

  • Fill each muffin cup about ¾ full with the batter.

Add Cheese & Finish Baking
