Prepare the Crust

  • Combine flour, baking powder, salt, and cubed cold butter in a bowl. Cut the butter into the flour mixture using a pastry blender or your fingers until it resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together. Wrap in plastic wrap and chill for at least 10 minutes.

Sauté the Vegetables

  • Melt butter in a pan over medium heat. Add chopped vegetables and sauté until tender-crisp, about 5-7 minutes. Season with salt and black pepper.

Assemble the Pie

  • Roll out the chilled dough and press it into a pie dish or baking dish. Brush with a little melted butter.

Add the Filling

  • Spread the cooked vegetables evenly over the crust. Pour tomato sauce over the vegetables. Sprinkle with mixed herbs and cinnamon.

Top and Bake
