Ingredients
Sabudana (Tapioca Pearls)
- 1 cup Tapioca Pearls covered with a damp cloth., tapioca pearls, then drained and allowed to rest overnight, washed thoroughly and soaked in water for at least 15 minutes

Spices & Flavorings
- 2 tablespoons Vegetable Oil peanut oil or vegetable oil
- 1 teaspoon Cumin seeds
- 1 pinch Asafoetida hing
- 1/2 teaspoon Turmeric powder
- 2 Chili Pepper finely chopped, green
- 1/2 teaspoon Chili Powder adjust to your spice preference, red
- 1 tablespoon Peanuts roasted and roughly chopped
- 1 - 2 teaspoons Salt to taste
- 1 teaspoon Sugar
- 2 tablespoons Coriander finely chopped, for garnish
- 1 tablespoon Lemon Juice
Instructions
Preparing the Sabudana Khichdi
- Heat oil in a pan over medium heat. Add cumin seeds and asafoetida; sauté for a few seconds until fragrant.
- Add roasted peanuts and sauté for 1-2 minutes until lightly browned.
- Add green peas and sauté for 3-4 minutes. Add the boiled potatoes and cook for another 3-4 minutes.
- Add turmeric powder, red chili powder, green chilies, and salt. Mix well and cook for 1 minute.
- Gently stir in the soaked and drained sabudana. Mix thoroughly, cover the pan, and cook for 3-4 minutes, or until the sabudana is cooked through but still slightly firm. Do not overcook.
- Remove from heat and stir in sugar, lemon juice, and fresh coriander leaves. Mix well.
- Serve hot and enjoy your delicious Sabudana Khichdi!
