  • 1 cup Tapioca Pearls also known as sabudana. rinse thoroughly before soaking.
  • 1 Potato medium-sized, boiled and diced

Prepare the Tapioca Pearls

  • Wash and soak the tapioca pearls in enough water to cover them by about half an inch. Soak for at least 6 hours, or preferably overnight, until they are soft and slightly translucent.

Sauté the Aromatics

  • Heat the oil in a non-stick pan over medium heat. Add the cumin seeds and curry leaves. Sauté until the seeds begin to splutter and the curry leaves are fragrant.

Add Potatoes and Spices

  • Add the diced boiled potatoes to the pan and sauté for 2-3 minutes, until lightly browned. Stir in the turmeric powder, red chili powder, and salt. Mix well to coat the potatoes.

Combine and Cook the Khichdi

  • Add the soaked tapioca pearls to the pan. Gently mix everything together. Add the crushed peanuts. Cover the pan and cook for 5-7 minutes, or until the sabudana is cooked through and the moisture is absorbed. Do not stir frequently during cooking.

Garnish and Serve
