Ingredients
For the Batter

- 1 Onion finely chopped, large
- 1/2 cup Dill finely chopped (sabbasige), fresh dill
- Salt to taste
- 2-3 tbsp Vegetable Oil or coconut oil for frying
For Serving (optional)
- Coconut Chutney red coconut chutney is traditional
- Mint Chutney pudina chutney is a refreshing option
Instructions
Preparing the Batter
- Wash and soak urad dal and fenugreek seeds in enough water for 4-5 hours.
- Separately, wash and soak rice and chana dal in enough water for 4-5 hours.
- Grind the soaked urad dal and fenugreek seeds in a wet grinder until completely smooth and fluffy, similar to idly batter. Add water as needed to achieve a smooth consistency.
- Drain the rice and chana dal. Add to the wet grinder with the urad dal mixture. Grind to a coarse consistency, adding water a tablespoon at a time until you achieve the texture of rawa (semolina). Do not make the batter too runny.
- Transfer the batter to a large bowl, cover, and let it ferment overnight at room temperature.
Adding Flavor & Cooking the Paddu
- In the morning, finely chop the onion and dill. Add both to the fermented batter along with salt. Mix well and let it rest for a few minutes. Adjust the consistency with water if needed; the batter should be pourable, like a thick porridge.
- Heat a Paddu tawa (or a regular non-stick pan) over medium heat. Lightly grease each compartment or section with oil.
- Spoon a small amount of batter into each compartment, filling about ¾ full. Close the lid and cook for 30 seconds on high heat. Then, reduce the heat to low and continue cooking.
- Cook for approximately 2 minutes with the lid closed. The paddu should start to brown on the bottom and sides while the top remains slightly uncooked.
- Use a skewer to carefully check the doneness. If the bottom is golden brown and the batter is cooked through, flip the paddu. If not, cook for a little longer before flipping.
- Once flipped, add a little more oil to the pan and cook the other side until golden brown, with the lid open.
- Serve the hot Sabbasige Paddu immediately with your favorite chutney. Enjoy!

- For the best results, use a wet grinder to achieve the ideal batter consistency. A blender can be used as an alternative, but a wet grinder produces a fluffier texture.

- Don't overcrowd the Paddu tawa. Leave some space between each paddu to ensure even cooking and browning.
