Ingredients
Dry Ingredients
- 1 cup Semolina also known as suji
- 1/4 tsp Baking Soda
- 1 1/2 tsp Salt adjust to taste
- 1/2 tsp Sambar Powder or a pinch of podi
Wet Ingredients
- 1 cup Yogurt also known as curd
- 1/4 tsp Ginger Paste
- 1/2 cup Water more may be needed to adjust consistency
Vegetables
Cooking Oil
- 2 tbsp Oil for cooking
Instructions
Prepare the Batter
- Mix 1 cup semolina and 1 cup yogurt with a little water. Let it rest for 10 minutes.
Prepare the Vegetables
- Grate the carrot. Finely chop the onion and tomato.
Combine and Adjust
- After 10 minutes, add more water to the semolina mixture until it reaches a slightly thicker-than-dosa batter consistency. Stir in the salt, baking soda, and ginger paste.
Cook the Uttapam
- Heat a non-stick tawa (griddle). Lightly oil it and wipe with a paper towel. Sprinkle a few drops of water; when it sizzles, it's ready. Add 1 large spoonful of batter and spread thinly. After a minute, sprinkle grated carrot, chopped onion, coriander, and tomato on top. Gently press the vegetables into the batter. Add a little oil around the edges.
Finish and Serve
- Sprinkle sambar powder or podi over the uttapam. After 2-3 minutes, flip and cook the other side for about 1 minute. Serve hot!
