Ingredients
For the Dough
- 2 cup All-Purpose Flour maida
- 1 cup Gram Flour besan
- 1 1/4 cup Clarified Butter ghee
For the Rosewater Syrup
- 2 1/2 cup Sugar
- 1 cup Rose Water homemade
- 1/4 cup Water
For Mixing
- 2 cup Coconut grated
For Garnishing (Optional)
- Pistachios chopped
Instructions
- In a large pan, melt the ghee over medium heat.
- Add the gram flour and all-purpose flour to the melted ghee. Stir constantly to prevent lumps.
- Continue cooking and stirring until the mixture turns fragrant and light golden brown. This toasting process enhances the nutty flavor of the flours.
- While the flour mixture is toasting, prepare the rosewater syrup. In a separate pan, combine the sugar, rose water, and water.
- Heat the syrup over medium heat, stirring until the sugar dissolves completely.
- Continue to cook the syrup without stirring until it reaches a one-string consistency. To test this, drop a small amount of syrup into a bowl of cold water; it should form a soft, pliable thread.
- Pour the hot rosewater syrup into the toasted flour mixture. Stir well to combine.
- Add the grated coconut and mix thoroughly until it's evenly distributed.
- Remove the pan from the heat and let the mixture cool to room temperature. This allows it to firm up and become easier to handle.
- Once cooled, shape the mixture into small diyas or any desired shape. You can use your hands or a mold.
- Garnish with chopped pistachios, if desired.
- Store the Rosy Delights in an airtight container at room temperature for up to a week.
