  • Add the gram flour and all-purpose flour to the melted ghee. Stir constantly to prevent lumps.
  • Continue cooking and stirring until the mixture turns fragrant and light golden brown. This toasting process enhances the nutty flavor of the flours.
  • While the flour mixture is toasting, prepare the rosewater syrup. In a separate pan, combine the sugar, rose water, and water.
  • Heat the syrup over medium heat, stirring until the sugar dissolves completely.
  • Continue to cook the syrup without stirring until it reaches a one-string consistency. To test this, drop a small amount of syrup into a bowl of cold water; it should form a soft, pliable thread.
  • Pour the hot rosewater syrup into the toasted flour mixture. Stir well to combine.
  • Add the grated coconut and mix thoroughly until it's evenly distributed.
  • Remove the pan from the heat and let the mixture cool to room temperature. This allows it to firm up and become easier to handle.
  • Once cooled, shape the mixture into small diyas or any desired shape. You can use your hands or a mold.
  • Garnish with chopped pistachios, if desired.
