  • Reduce the heat to low-medium and continue to cook for about 2 minutes until the syrup reaches a one-string consistency. This ensures the Kaju Katli sets properly.
  • Add the cashew powder to the sugar syrup and mix vigorously. Stir continuously to prevent lumps from forming.
  • Continue stirring for 2-3 minutes until the mixture thickens and starts to come together. Remove from heat and let it cool slightly in the pan.
  • Once the mixture is cool enough to handle, gently knead it into a smooth dough.
  • Lightly grease a flat surface or a piece of parchment paper with ghee. Place the dough on the greased surface and gently flatten it with your hands.
