1/2cupmixed Bell peppers..I used Red yellow orange and green
1/2carrot finally chopped
Salt as per taste
1tspChilli flakes if want spicy
1/2cupfull fat cream
1tbspall purpose flour or for make it Healthy can use wheat flour
1tspgarlic paste optional
1bunch of chopped fresh parsley..
First we wash soak rice for 15 minutes and cook rice as we normally cook but we will not full cook it only up to 80.-90%. Because rice will baked .We can use leftover rice too..
Now strain excess water and keep rice aside to cool down..Now we will make white sauce.heat a pan add butter when it melted add flour saute it ..We don't want brown in color .Add cream and milk mix Welland keep stirring.so nolumps occur.
Add salt and black pepper as per taste..But we will add cheese so salt should keep less.mix well..Let it little thick in quantity.. Switch off the gas..
Now heat another pan add olive oil add garlic paste add onion saute it ..Add all bell peppers beans and carrot mix well..
Add black pepper and salt mix well ..Keep stirring.add white sauce mix well..
Add ready rice and mix well .Adjust seasoning as per your taste..Now cook it for 5-6 minutes so that rice aborbe texture of white sauce and veggies..If mixture become dry add little milk in it..
Now heat a pan at 180'C ..Grade a baking pan with butter..Pour risotto mixture in it.. Garnish it with mozzarella cheese and Parmesan cheese and chopped parsley over it..
Bake it for 15-20 minutes at 180'C or till cheese melts and brown in color..
