Ingredients
 

For the Paneer Marinade:

  • 200 gm Cottage Cheese indian cottage cheese. ensure it's fresh and firm.
  • 100 gm Yogurt also known as curd.
  • 1.5 tsp Salt adjust to taste.
  • 1 tbsp Chili Paste or use 1-2 finely chopped green chilies. adjust to your spice preference., green
  • 1/4 tsp Chili Powder adjust to your spice preference., red
  • 1 tsp Garam Masala a blend of ground spices.

Prepare the Paneer Marinade

  • Cut the paneer into 1-inch cubes. In a bowl, combine the paneer, yogurt, salt, green chili paste, red chili powder, and 1 tsp garam masala. Mix well, ensuring the paneer is evenly coated. Marinate for at least 1-2 hours in the refrigerator.

Make the Sauce

  • Heat butter in a pan over medium heat. Add mustard seeds and cumin seeds; once they splutter, add sliced onions and sauté until lightly browned.
  • Add the chopped green bell pepper and sauté for 2 minutes. Stir in the coriander powder and remaining garam masala. Cook for another minute until fragrant.
  • Add the pureed tomatoes and cook for 5-7 minutes, until the sauce has thickened slightly.
  • Stir in the chopped cashews and water. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.

Grill the Paneer (Optional)

  • Preheat your oven to 180°C (350°F). Spread the marinated paneer cubes on a baking sheet and bake for 10-12 minutes, until lightly browned and slightly grill-marked. Alternatively, you can pan-fry the paneer until golden brown.

Combine and Finish

  • Add the grilled (or pan-fried) paneer to the simmering sauce. Stir gently to combine. Add the heavy cream and simmer for another 2-3 minutes, or until the sauce has reached your desired consistency.

Serve

  • Garnish with fresh coriander leaves. Serve hot with naan bread, roti, or jeera rice.
