Marinate the Paneer

  • Combine paneer, bell pepper, yogurt, tandoori masala, lemon juice, salt, and sugar in a bowl. Mix well and let it marinate for at least 30 minutes, or preferably longer in the refrigerator.

Bake the Paneer

  • Preheat your oven to 350°F (175°C). Spread the marinated paneer and bell pepper in a single layer on a baking sheet. Bake for 15-20 minutes, or until lightly browned and slightly charred.

Prepare the Gravy

  • Heat oil in a pan or kadai over medium heat. Add cloves, cardamom pods, and cumin seeds. Sauté until fragrant (about 30 seconds).
  • Add ginger-garlic paste and sauté for another minute until fragrant. Then, stir in the tomato puree, turmeric powder, red chili powder and salt. Bring to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the sauce has thickened.

Combine and Finish

  • Gently add the baked paneer and bell pepper to the tomato gravy. Stir carefully to combine.
  • Heat butter in a small pan. Add dried fenugreek leaves and cook for 30 seconds until fragrant. Stir in the cream and garam masala (if using). Pour this mixture into the kadai with the paneer and gravy.
  • Simmer for another 2-3 minutes, allowing the flavors to meld together.
