Ingredients
For the Chicken Marinade
- 1.5 lbs Chicken Thighs skinless and boneless
- 2-3 Tbsp Yogurt
- 2 Tbsp Tandoori Masala
- 1 Tbsp Ginger grated
- 3-4 clove Garlic grated
- 1/2 tsp Salt or to taste
- 1 Tbsp Olive Oil
For the Tikka Masala Sauce
- 3-4 Tbsp Tomato Purée
- 9-10 clove Garlic grated
- 2-3 Tbsp Cream sour
- 1-2 tsp Tandoori Masala
- 1 tsp Garam Masala
- 1/2 tsp Chili Powder red
- Salt to taste
- 2-3 Tbsp Olive Oil
- 1 Onion cubed, red, small
- 1 Bell Peppers cubed, green
For Serving
- Water as needed
- Naan, Rice, Or Roti as needed
Instructions
- Cut the boneless, skinless chicken thighs into bite-sized pieces. In a mixing bowl, combine the yogurt, 2 tablespoons of Tandoori Masala, grated ginger, 3-4 cloves of grated garlic, salt, and olive oil. This marinade tenderizes the chicken and infuses it with flavor.
- Add the chicken pieces to the marinade, ensuring they are well coated. Place the marinated chicken in a zip-top bag or airtight container and refrigerate for at least 5-6 hours, or preferably overnight, for maximum flavor penetration.
- Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers. Grill the chicken, turning occasionally, until it is cooked through and has a nice char. This adds a smoky depth to the final dish.
- Heat 2-3 tablespoons of olive oil in a large skillet or kadhai over medium heat. Add the remaining grated garlic (9-10 cloves) and sauté until fragrant and lightly golden. This builds the flavor base of the sauce.
- Add the tomato purée to the skillet and cook for 2 minutes, stirring occasionally, until it slightly darkens in color. This intensifies the tomato flavor.
- Add the grilled chicken to the sauce, ensuring it's well coated. Season with salt, garam masala, and red chili powder. These spices create the signature Tikka Masala flavor profile.
- Stir in the sour cream and 1-2 teaspoons of tandoori masala. The sour cream adds richness and balances the spices, while the extra tandoori masala enhances the color and flavor.
- Add water to the skillet to create your desired gravy consistency. Add the cubed bell peppers and onions. Simmering the vegetables in the sauce allows them to soften while absorbing the flavors.
- Cover the skillet and simmer for 5-7 minutes, or until the vegetables are tender and the sauce has thickened slightly. This allows the flavors to meld together beautifully.
- Serve the Chicken Tikka Masala hot with naan, rice, or roti. Garnish with fresh cilantro, if desired.
