Ingredients
- 300 gm Chicken boneless, cubes
- 1 tbsp Coriander
- 1 tbsp Cumin Seed
- 1/2 tbsp Garam Masala
- 1 tbsp Ginger Garlic Paste
- 1 tbsp Chili Powder
- 2 tbsp Lemon Juice
- Salt as per taste
- 100 gm Hung Yogurt
- Oil for brushing
- 2 tbsp Mustard Oil
- 1 tbsp Kashmiri Chili Powder red
- 1/2 cup Coriander chopped
- 1 Onion rings, to serve
- 2-3 tsp Chaat Masala as per taste
Instructions
Prepare the Chicken
- Cut the chicken into 1-inch cubes. Wash thoroughly and pat completely dry.
First Marinade
- In a large bowl, combine the lemon juice, hung curd (or Greek yogurt), ground coriander, ground cumin, garam masala, ginger-garlic paste, chili powder, and salt. Add the chicken and mix well to coat evenly. Marinate for at least 1 hour in the refrigerator, or preferably longer for maximum flavor.
Second Marinade
- Add the mustard oil and Kashmiri chili powder to the marinated chicken. Gently mix until the chicken is evenly coated. Marinate for another hour.
Assemble and Cook
- Thread the marinated chicken onto skewers. Brush the skewers lightly with vegetable oil.
- Preheat your oven to 180°C (350°F). Place the skewers on a baking sheet and bake for 25-30 minutes, or until the chicken is cooked through and slightly charred.
Serve
- Remove the kebabs from the oven and let them rest for a few minutes. Garnish generously with chopped fresh coriander, onion rings, and chaat masala. Serve hot and enjoy!
Recipe Notes
Expert Tips for Perfect Chicken Tikka Kebabs
- For extra smoky flavor, grill the kebabs on a charcoal grill instead of baking them in the oven.
- Don't overcrowd the baking sheet or grill; ensure adequate space between skewers for even cooking.
- If using wooden skewers, soak them in water for at least 30 minutes before using to prevent burning.
- Adjust the amount of chili powder to your preferred spice level. For a milder kebab, reduce the amount of chili powder and add a pinch of sugar to balance the flavors.
