Instructions

Prepare the Kofta Filling

  • In a bowl, crumble the paneer. Add crushed black pepper and a pinch of salt. Mix well and set aside.

Make the Kofta Dough

  • Boil the potatoes until tender. Peel and grate them. In a large bowl, combine the grated potatoes, bread crumbs, corn flour, 1 tablespoon of ginger-garlic paste, green chili paste, and salt. Mix thoroughly until a smooth dough forms.

For the Gravy

  • In a separate pan or wok, heat 2 tablespoons of oil. Add the onion paste and the remaining ginger-garlic paste. Sauté until lightly golden.
  • Add the chopped tomatoes and red chili powder. Cook for 2 minutes, stirring occasionally, until the tomatoes soften.
  • Add the turmeric powder, ground coriander, garam masala, and salt. Cook for 1 minute, allowing the spices to bloom. This enhances their flavor and aroma.
  • Stir in the yogurt and cook until the mixture starts to separate from the sides of the pan, indicating the oil is releasing.
  • Pour in 1 cup of water and bring the gravy to a boil. Reduce heat and simmer for 6-7 minutes, or until the gravy thickens slightly.

Serve

  • Just before serving, gently add the fried koftas to the hot gravy. Garnish with fresh coriander leaves.
  • Serve hot with roti, paratha, or naan.

Recipe Notes

Good To Know

  • Make slightly more gravy than you think you'll need, as the koftas will absorb some of it.
  • Don't let the nargisi koftas sit in the gravy for too long before serving.

Expert Tips

  • For extra flavor, try marinating the koftas in a mixture of yogurt and spices before cooking.
  • Garnish the finished dish with fresh herbs like cilantro or mint for a pop of color and freshness.
  • If you want a richer gravy, use heavy cream or cashew paste.

Storage Instructions

  • Store leftover koftas and gravy separately in airtight containers in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or in the microwave, adding a splash of water or stock if the gravy has thickened too much.
