Ingredients
For the Hung Curd (Strained Yogurt):
- 2 cup Yogurt full-fat yogurt recommended; strain in a cheesecloth-lined sieve for at least 4 hours or overnight to remove excess whey. this yields approximately 2 tablespoons of thick hung curd.
For the Shrikhand:
- 1 cup Mango Puree fresh mango puree is ideal. you can also use store-bought puree.
- 1 cup Watermelon seedless watermelon is recommended. cube 1 cup for layering and reserve some balls for garnish.
- 2 tbsp Hung Yogurt see instructions for making hung curd
- 1 tbsp Caster Sugar adjust to your sweetness preference.
- 1 tbsp Pistachios sliced pistachios for garnish.
Instructions
Prepare the Hung Curd
- Line a fine-mesh sieve or colander with cheesecloth. Pour 2 cups of plain yogurt into the lined sieve. Let it drain in the refrigerator for at least 4 hours, or preferably overnight, to remove excess whey. This will result in a thick, creamy hung curd.
Make the Watermelon Mango Shrikhand
- In a bowl, gently combine the hung curd, 1/2 cup of the mango puree, and castor sugar. Mix until well combined, ensuring not to overmix.
Assemble and Garnish
- In individual serving glasses or bowls, layer the ingredients as follows: Start with cubed watermelon at the bottom, then add a layer of the remaining mango puree. Next, add a layer of the hung curd mixture. Top with sliced pistachios and garnish with a few watermelon balls.
