Ingredients
Yogurt Base
- 2 cup Hung Yogurt also known as chakka. strain regular yogurt in cheesecloth for 4-6 hours to remove excess whey., greek yogurt
- 1/2 cup Sugar powdered
Mango & Spices
- 3/4 cup Mango Pulp fresh mango pulp is ideal, but you can also use canned or frozen.
- 1/2 tsp Cardamom Powder
- 1/4 tsp Nutmeg Powder also known as jaiphal, freshly grated is best.
Flavor Enhancers
- 1 tbsp Milk warm milk helps infuse the saffron.
- 1 pinch Saffron Strands about 5-6 strands.
Garnish (Optional)
- 2 tbsp Almonds Or Pistachios or any other nuts or sprinkles you prefer., chopped
Instructions
Prepare the Saffron Milk
- In a small bowl, combine warm milk and saffron strands. Let it sit for 10 minutes to allow the saffron to infuse and release its color and flavor.
Prepare the Mango Pulp
- If using fresh mangoes, peel, chop, and blend them into a smooth puree. If using canned or frozen, simply thaw and ensure itβs smooth.
Combine Ingredients
- In a large bowl, whisk the hung curd until smooth and creamy. Add the mango pulp and powdered sugar. Mix gently and thoroughly until well combined.
Incorporate Spices and Saffron Milk
- Gently fold in the saffron milk, cardamom powder, and nutmeg powder. Use a spatula to avoid overmixing, which can lead to a thinner consistency. Mix until just combined.
Chill and Serve
- Refrigerate the shrikhand for at least 1 hour to allow the flavors to meld and the texture to thicken. Garnish with chopped nuts or sprinkles before serving chilled.
